Why Muslims don't eat bacon?

Allah Almighty prohibits for His servants to eat swine. The Qu'ran says, "Forbidden to you (for food) are: dead meat, blood, the flesh of swine, and that on which hath been invoked a name other than that of Allah. It depends on Allah's command what is permissible (halal) or what is not. If Allah says permissible for something, it becomes permissible, if He says that it is not permissible, it becomes unpermissible.
