Muslim women cover their heads because God so directed in His final book, the Glorious Qur'an. The head cover is specifically mentioned in 24:31. This instruction from God is only one aspect of a wider context of purity of thought and action for men and women!!

The covering of the head I find is more a Saudi / Gulf tradition. IF u find Muslims in Syria, the "typical" attire is jeans and t-shirt. SAmarkand based Muslims also don't cover their heads. U can look up Muslims in the Soviet Union. Soviet Union didn't ban hijabs- Eastern Orthodox Christians in areas like Georgia covered their heads....
