The Persians, who were observers of the Muslim faith, came next and were responsible for establishing Muglai Rule. They had a huge influence on Indian cuisine, introducing lamb in the form of kebabs seasoned with spices and served with rice, dried fruits such dates and raisins, nuts such as almonds, pistachios and cashew were used to garnish and flavour their food. Around that time the Tandoori oven (a clay oven capable of reaching extremely high temperatures in which meat and bread is cooked) was invented by the Muglai royal chefs which influenced the emergence of the roti and leavened bread such as Naan to be developed.

The Persians were lovers of sweet foods and it was they who first introduced sweetmeats and desserts to the Indian cuisine. They also brought to India, fine dining, grace and style to the dining table with extravagant banquets, using jade, Chinese porcelain and silver wear to serve and display the food.
