Both places become extremely crowded during summer holidays. Mahabaleshwar is cooler than Panchgani in summer and so is preferred by most people. If you can avoid the summer season for your trip to either place, it would be better. There are several smaller places in Maharashtra and Karnataka which are not as famous as these two, but would provide you relaxation even in summer due to lesser crowd,

Both are so close, go to Mahabaleshwar first, while coming back you can stop at panchgani too.
