When we freeze fruits ,does it take away the vitamins from that ?

No, the cold simply retards growth of microorganisms and slows down changes that affect the quality

..with time, there is a downgrade of quality and of reduction of vitamins of fruits (and veggies), that is why they are called perishable commodities.
Freezing will greatly reduce the speed of this downgrade.

Not the vits as such....but moisture n some of the antioxidants loose their power
