Salads are already prepared and do not need heating promptness,,, serves guests in restaurants quicker..
Less tradition bound came into
use in California , now even the new immigrants there = 1 million a year
use the same idea.
Some directors of world kitchen' chains start with deserts, just to check how they look and can sooner be on their way, busy people, do not fuss with worrys about mixed habit.

I think its frm Europe, there is one more Custom which we adopted by Mughals and it is giving finger bowls after meal in Hotels

In India customs, it goes back to Centuries if you consider prepared vegitables also as a Salad
