1. Olive Oil

In our region, the Gingilee oil (Til ka tel) is considered the best. That is the reason why it's called "Nallennai" (Good oil) in Tamil. It has plenty of Omega 3 and completely free of cholesterol. They also say olive oil has same properties. But we don't like the taste of food coocked with that oil.

No comparison for Olive Oil. Cotton seed Oil, Sufflower Oil (kardi ka tel), Sun Flower oil, Rice Bran oil (all refined)have least amount of choleserol, hence ideal cooking media. Then comes Refined Soyabean oil, Refined Groundnut oil, refined mustard/rapeseed oil, folowed by Coconut/Palm oil, etc. But the flavours of cotton seed oil and rice bran oil are unpalatable.

Mustard oil because it has the highest unsaturated fatty acids amongst all edible oils and it is best for heart and chlrestrol
