Fry onions,ginger-garlic paste, add veggies, salt, pepper, water and cook till soft, add masala containg paste of coconut, dhania, khus khus, lavang, patta, a little jira, and stir for two minutes.add coriander and mint leaves . the veg is ready.
Alternately you can add mixture of besan, groundnuts, curds or tamarind juice for gravy depending on the choice of vegetables

Put some oil of your choice in a pan,add hing,zinger paste,chopped onion(optional),fry for some times,add tomato past,mix coriander powder,turmeric powder and red chilli powder according to the taste.stirr for some time as longer the mixture leaves the sides of the pan.Mix water and salt.You can mix beaten curd or leman drops according to the taste.
