Q.
There are hundreds of vegetable or pulses in the market. But we do not see these vegetables in Hotel? Why? They have fixed veggies like potato, beans, turdal, chana, guard. Why do not they serve other vegetables?

Still many hotels are influenced by western influence of cuisine but many stand alone indian restaurents do serve.

The a la carte menu can feature only items which are always available
But seasonal items can be served on buffets

They are available on demand....in hotels where....the menu is not fixed....however the menu-card caters for the general needs of the general public....

The cost factor is one. in chennai , regular vegetable is potato and also cabbage. easy to buy , easy to store and cheap price.
beans or rajma etc, are expensive and shelf life of beans is also less
