So far Biriyani is concerned it makes no much difference whether it is made of high quality Basmati, or low quality Basmati or any other verity of rice that resembles Basmati in its shape and size. Greatness of Basmati is its flavor. In a spicy preparation like biriyani it makes no difference whether it is made out of Basmati or any other variety of rice so long that rice is thin and long in structure when it is cooked. On the other hand for less spicy dishes like pulloau, kheer, or even plain Dal chawal or Khadi chawal, jeera rice etc where the aroma of the rice stands out, there cannot be any substitute for a good Dheradun Basmati rice.
