From religous point of view:

1) the body is burnt so that any wishes if unfulflled does not allow the AATMA (SOUL) which has keft the body after death to fill like entering the body again to fulfill those wishes. Since the body is burnt, AATMA travels it way to its destination without any greed left.

from scientific point of view:

1) the body is burnt so that space required is very less & does not go on increasing per dead body. Ashes are immersed in holy waters.
2) if the person was suffering from any disease, by burning the body, all the chances of spreading the same vanishes.

with due respect to other religions, Hindu method of setting the dead body on fire is scientifically the best way.

I do not know where you got this information from. It might be true. The funeral rites are the like the final yagya, where the body, itself, is the offering given back to Nature. It does release the soul from attachment.
Yes, Indians do believe in the rebirth. In fact, in my case it is beyond just mere belief but have actually come across some such cases
