Western countries is a very general term as there is a great diversity among their cuisines. It is as misleading as using the term Asian food to cover Chinese, Indian, Japanese, Thai, etc.
The Europians, in general, do not use much chillies, except for sweet capsicum. But Hungarian paprika is an essential element to Hungarian food. Mexicans love chillies and use around 8 varieties of them. Americans make Tabasco sauce. It is a hot sauce made from a particular variety of chillies.
