It's a French exprerssion meaning to order food "off the menu" rather than order a "Special of the Day".

Means to order individual items from the menu, as opposed to ordering a set meal.
Means placing an order from the Restaurant Menu Card unlike a few restaurants which spread buffet for breakfast,lunch & dinner leaving no choice for the guest to eat anything else from whats available on the buffet table.

So,if u have a choice to eat what you want is 'a la carte' in short.
