Calories are easy to get, nutrients are difficult. Rice and similar carbohydrates and simple sugars, oils and fried foods are loaded with calories. But nutrients? Take a balanced diet with complex carbohydrates (wheat, hand pounded rice, whole grain breads etc.), dals and other protein bearing foods and a small quantity of ghee or oil. Nuts like almonds are good. Sprouts are good. Vegetables and fruits are good sources of minerals, vitamins and fiber.

Overall oil consumption should not exceed 20 per cent of the total calories or not more than 40gms per day as recommended by the Indian Council of Medical Research (ICMR). Surprisingly some of the healthiest oils are what Indians traditionally use - mustard, sesame, groundnut, cottonseed. These are healthier than corn or safflower oils in the Indian context. Olive if locally available may be included in the daily diet. It is prudent to use a combination of oils as each has different proporrtion of saturated, monounsaturated and polyunsaturated fats
