Maharashtrians do eat a lot of vegetables.
It all depends upon the taste and liking. For example, brinjal is one of the all time favourate of Maharashtrians. They also love various bean-pod seeds (fresh). Shepoo is an all - time favourate. (it is known as dill in English). Leafy vegetables like laal maath, chauli, methi, etc are relished by Maharashtrians.
But the vegetables sold in Mumbai are not as tasty or flavorful as the ones in Delhi
