Why this fixation for Australia? There are only 42 (soon to be 43) universities in Australia, all of them are fully accredited and tightly regulated, therefore the quality and recognition of their graduates are equal from wherever university you are studying from.
If you need a list then try RMIT University, Griffith University, Deakin University, University of Canberra, UNSW, UTS, University of Western Sydney, and La Trobe University. These are the lists of the best Down Under. Check their sites for more details.

There are a wide variety of courses offered in and related to animation, at numerous universities across Australia. You need to be a lot more precise in what exactly you're looking for, whether its distance education or study abroad, what duration course, your budget, the region etc. Anyway the Australian government hosts an excellent site for foreign students, and I'm quite sure it would have all the possible info you could ever need: http://studyinaustralia.gov.au/Sia/en/Home.htm
