To assist a big time hotelier at coimbatore to site 20 fast food restaurants at chennai , i surveyed about 1000 hotels of decent calibre to asses potential in each area so the exact locations , the turn over per day can be estimated to submit the feasibility report to IDBI .(1) Location of the hotel in a decent surroundings ,with or with out car parking (2) spacious ,well furnished with or without ac (3) Servers in uniform , with polite service ( 4) Menu card on each table and (all varieties like continental , chinese and indian type of veg and non-veg food availability is preferable ) (5) Reasonable rate (6) Most important is EXCELLENT OR GOOD TASTE BEING AVAILABLE . (7) Reasonably quick and fast service . These are the characteristics of good hotel we defined first and shot a video covering several hotels to show to the students doing the survey . Cleanliness is the foremost criteria. It should not be messy. Sufficient place should be there between the rows of tables and chairs so that one can easily get up from the sit. Extra care should be there to prevent flees, bugs, lizards to roam on walls or in the premises. Dishes should be served in clean and good-in-look plates, bowls and glasses. Enough fans, air coolers and exhaust fans should be there. Counters, shelves, hoods, and sinks clean free from dust, dirt, insects, and other contaminating material. Dustbins should be far away from dining. My mood gets spoil if I see them even at arms distance. Waiters and all those engaged in kitchen should have dress code and should strictly follow cleanliness and good-behaviour with customers. All the above things make more pleasant for customers to visit and a better place in which to work.

First and foremost. cleanliness everywhere including the kitchen area and the staff, alongwith the serving area and no doubt in preparation of food..... This will lead to good ambience and followed by quick, efficient warm service and polite behaviour of the staff.
