Generally in hotels, there is a south thali and north thali, why not east or west thallis....?

Good observation. Food contents of North and South India are quite distinctive in nature. Perhaps, east and west are included in this north itself.

In some Pune restaurants, they have written in their boards kept outside: Malwani food, Goan food, Punjabi food, Chinese food and so on. I did not notice north or south. But I have seen in some places North Indian and South Indian thali. Once they write East thali and West thali, someone will say why there is no North East thali and South West thali. There will be no end to this. Hence, it is fine to say North or South. Most of the time North food is actually Punjabi style.

Visit Peerless Inn in Kolkata, unique Eastern Dishes ( Thali ) are served there. Visit any town /city in Orissa , you will get unique Eastern Dishes there, in Hindu/ brahmin restaurant.

East may be not , but you do have west thali and it is knows as gujarati thali
