This curry is very healthy, sans too many spices, hardly any oil and easy to digest from 1 year olds to 90 year olds.
Aloo Potoler jhol
Take 2 potatoes - peeled and cut into pieces
Take 4 parwals - cut into roundels
One teaspoon of oil
half teaspoon of paanch phoron
salt to taste
a little haldi powder
Gas for cooking and gas stove
Heat the oil in a wok. Add the panchphoron. When it begins to splutter add the vegetables. Stir a bit. Add the salt and haldi. Add a 200 ml lot of water . Cover and cook till veggies are done. Remove from flame.

For Aviyal:

Ash gourd/cucumber: 1/4 kg
Elephant yam (suran) : less than 1/4 kg
Raw plantain: 2
Snake gourd: one big
Beans: 1/4 kg
Carrot: 2 ...more
