In pressure cooker, add the baigan and potatoes and cook for 2 whistle.
Remove and peel the skin of baigan and potatoes and keep in a bowl, drain the extra water and mash it thoroughly. Keep aside.
Heat the oil in a fry-pan add the cumin seeds.
When the seeds crackle add the onions and saute till the onions turn golden brown in colour.
Add the tomatoes, chilli powder, turmeric powder, ginger, green chilies and salt and cook for 5 minutes on high flame.
Add the mashed baigan and potatoes and cook for 2 to 4 minutes on a medium flame.
Serve hot and garnish !

Wow, my favorite Yummy :-))......Baigan me kuch jagah thode cut laga ke Tandoor ya fir Gas par bhoon le, chilka utar kar achhe se crush kar le, Lahsoon adark aur mirch ka masala pees kar ke pyaj Tomato aur Mutter ke sath baigan ko fry kar le.......aur mujhe Khane pe Invite kare :-))

1 Finely chopped onions
1 Finely chopped tomatoes
1 Finely chopped green chilli
1/2 tsp Red chilli powder
1/2 tsp Garam Masala Powder ...more

Baingan ko jalla lo...........aache se.........Aur onion tomato ka masala tyaar kar ke...sab spieces add kar ke.....uss mai jalle hue baingan ko add kar do......Haa dnt forget to peel it's jali hui Chamadi...:P
