Because the jet stream passing through Iceland is passing in a south-easterly direction, which is pushing the ash first to the north of Scotland and Denmark and Norway down into the UK and then across Europe. The ash plume is travelling in the part of the sky which is normally occupied by aircraft and if it gets into the engines of the craft could cause it to crash.

The Ice land is far off from those countries. It is near North pole. Polar winds are much in that area. The winds from the pole comes through the volcano eruption carries the ashes and smoke from it to the main lands. Because of which the flights travel impacts.
